The top 9 recipes that might be on the final exam

The blogging of my notes from class has fallen way off - -but they're really just for me so that's not such a big thing. I'll promise myself to do a rework on this later.

Meanwhile they've given us the list of 9 candidate recipes for the final exam. We won't know which one we end up doing until the actual day. Exam is done with 1) the recipe page and 2) no notes; from memory.
I'll be studying - a lot.

The winners are:
  1. Paupiettes de Veau Bourgeoise
  2. Tronçons de Colin Pochés, Sauce Hollandaise
  3. Suprême de Volaille Farci, Sauce aux Champignons
  4. Filet de Barbue Duglere & Pommes Anglais
  5. Blanquette de Veau á l'Ancienne & Riz Pilaf
  6. Filet de Daurade Poêlées au Fenouil & Pommes Anglais
  7. Côtes de Veau Grand-mére
  8. Cannette Rôtie aux Navets
  9. Poulet Rôti, Jardiniére de Légumes
One of those plus: 2 Merlans a lever en filets
